RUM:
Rum is a distilled alcoholic beverage made from sugarcane byproducts, such as molasses, or directly from sugarcane juice, by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak barrels.
The majority of the world's rum production occurs in the Caribbean and Latin America. Rum is also produced in Scotland, Austria, Spain, Australia, New Zealand, Fiji, the Philippines, India, Reunion Island, Mauritius, South Africa, Taiwan, Thailand, Japan, the United States, and Canada.
Rums are produced in various grades. Light rums are commonly used in cocktails, whereas "golden" and "dark" rums were typically consumed straight or neat, on the rocks, or used for cooking, but are now commonly consumed with mixers. Premium rums are also available, made to be consumed either straight or iced.

Rum is an exotic spirit made from molasses or virgin sugar cane. It comes in many different types and is often categorized in colors. The mildest are the Light or White rums, while the Gold and Amber have spent time in some sort of barrel adding to a stronger taste. The Dark rums have been barrel- or even cask-aged for longer, and taste a bit more like whisky and the Black are as rich in flavor like a Guinness. Spiced rums contain flavors from spices and other exotic elements, which gives the rum a unique and interesting character. Some are rested in a few days and others are aged for years. No strict classification system, like the one known from bourbon exists, and consequently any spirit that starts with some form of sugarcane can be called rum. Some rum’s are sweet while others are dry. The taste depends on three basic factors: the duration of the aging process, the type of barrel of said aging and the form of sugarcane used. There is great diversity within the dryness and we recommend that you stock your bar cabinet with different kinds. Rum is obviously enjoyed in a lot of mixed drinks. But it’s also a drink to be enjoyed in its own right.

INGREDIENTS IN THE LONG ISLAND ICED TEA COCKTAIL
3⁄4 oz Gin
3⁄4 oz White rum
3⁄4 oz Silver tequila
3⁄4 oz Vodka
3⁄4 oz Triple sec
3⁄4 oz Simple syrup
3⁄4 oz Lemon Juice
Cola

1 Lemon wedge
Glass: Highball or hurricane
HOW TO MAKE THE LONG ISLAND ICED TEA COCKTAIL
Fill a highball or hurricane glass with ice and add all the ingredients except the cola.
Top with a splash of cola and stir briefly.
Garnish with a lemon wedge.
