There were angels, there were demon, so why shouldn't there be reapers? The persona of Death was bored just collecting souls. They sometimes used the reapers for entertainment but that eventually ended up being boring too. However, a chance encounter led for Death to discover an unlikely friendship between an Angel and a demon.

ᴀᴅᴅɪᴛɪᴏɴᴀʟ ɪɴғᴏʀᴍᴀᴛɪᴏɴ

— I picture Death as a gender less entity that can take on any form at will.  They can take any appearance wether it be a feminine, masculine or even an animal
— Death is the leader of the four horseman.
— Some of the plot regarding the four horsemen will have to be adjusted due to Death forever changing attitude.
— Death doesn't care if the apocalypse happens.
— Not really important to the plot but I personally see Death as an asexual being.*
